Ristorante Castello di Santa Vittoria

Chef Paolo Decio was born in the province of Milan and attended the Hotel Management School in Stresa (VB).
After completing his studies, he gained work experience in London, Rome, Paris and Milan before settling down in this area.

Here he had the opportunity to work closely with Ugo Alciati at the Guido Restaurant and solidify his passion for the authenticity and simplicity of the products of this land.
He became chef at the Castello Restaurant in Santa Vittoria d'Alba, and his dishes reflect traditional flavours enriched by a wealth of memories and travels that are part of his personality and define his style.
Paolo offers an alternative and balanced menu that respects the seasonality of the ingredients and demonstrates an awareness of the local area.
